Assyrtiko (pronounced ah-SEER-tee-ko) is an ancient grape variety from GREECE…and one of the few white grapes in the world that can thrive in sometimes harsh, hot climates.

The grapes from this bottle come from very high elevations which takes advantage of cooler nights, equaling higher acidity and a more refreshing character. The wine is also wild fermented, meaning that the winery is letting Mother Nature do her thing…and letting the grapes ferment naturally using only the wild yeasts present on grapes when harvested. The result is a fun wine with some attitude…think lemon zest, nectarine, and sea spray salinity (the grapes are grown right on the Mediterranean, after all!)
